Chicken Boursin Bundles: It only looks like you fussed...

One of my husband and my favorite recipes is 'Chicken Boursin Bundles' and it comes from my Junior League cookbook. It looks like you went to a LOT of work for the meal, but it really is pretty simple. It's GREAT to serve when you have guests over (and want to impress them).

Chicken Boursin Bundles
Juniore League of Clearwater-Dunedin Cookbook

Ingredients
4 ounces Boursin garlic and herb cheese blend
2 cups chopped cooked chicken (for an easier fix use a grocery store rotisserie or have a baked whole chicken the night before and save 2 cups of chicken)
1 T chopped onion
2 T milk
salt and pepper to taste
1 package frozen puff pastry (pictured)
1 egg, beaten
1 t water
3 T bread crumbs or grated Parmesan cheese

Directions
1. Combine the Boursin cheese, chicken, onion, milk, salt and pepper in a bowl and mix well.
2. Roll out the puff pastry into 1 large square (the puff pastry I get comes folded into thirds, take out 15 min early and lay on parchment paper to thaw enough so you can unfold it. If it cracks, wait until it softens more and use fingers to push back together)
3. cut into 4 squares.
I use a pizza roller to make smoother cuts
4. Spoon 1/4 of the chicken mixture into the center of each pastry square.
5. Bring the 4 corners together in the center, pinching seams to seal.

6. Beat the egg with the water in a small bowl
7. Brush the top of each pastry bundle with the egg wash
8. Sprinkle the bread crumbs over the top of each bundle. Arrange the bundles on a baking sheet.
9. Bake at 350* for 20-25 minutes or until golden brown
