One more chance for hand-me-downs...

If you missed the Gender Reveal Post, #3 is going to be ANOTHER GIRL! Maybe I ought to change this blog to "Moore Girls" instead of "Moore Babies", I kid I kid.


So the other day I was rotating out the clothes in my youngest daughters closet.

Getting all the rest of the 12mo clothes out of the closet ...

... and pulling the 24mo clothes out of storage. (PS - I SWEAR Charlotte was JUST in these clothes, I can't believe Jillie is going to start wearing them)

For all previous clothes rotations, I always felt a twinge of guilt for packing up those super cute outfits that only got 1 or 2 uses out of them. But THIS TIME... I just smiled knowing that another of my little girls is going to wear them!

I really lucked out with their birthdays:
Charlotte - February
Jillian - September

I had a to buy a few things that were kind of off-season between the 1st two girls, but...

#3 - December.... right in the middle. I will pretty much not have to buy this little girl ANY new clothes (unless of course I see something super-duper-oober-cute- that I MUST buy my darling baby girl).

{Pinned there, Done That} Spinach & Pepperjack Stuffed Chicken

I came across this pin the other day for Spinach & Pepper jack Stuffed Chicken over at Cooking Creation so I decided to add it to my meal plan for the week.

It was a success!



The directions said to use 1 tablespoon breadcrumbs and 2 tablespoons Cajun for the crust... but I flipped it because (a) the little ones were going to eat this and (b) it didn't seem like enough bread crumbs and TOO much Cajun. Even with switching up the amounts it was a tad spicy when combined with the pepper jack cheese but we both LOVED this recipe.

This will be added to our "approved" recipe rotation!!

In case the original recipe gets lost... here you go:

Cajun Chicken Stuffed with Pepper Jack Cheese & Spinach
(Cooking Creation)
Ingredients:
Serves 4


Preparation time: 15 minutes
Cooking time: 40 minutes



  • 1 lb boneless, skinless chicken breasts
  • 4 oz pepper jack cheese, shredded (you can use up to 6 oz)
  • 1 c frozen spinach, thawed and drained (you can also use fresh cooked spinach)
  • 2 tbsp vegetable oil
  • 2 tbsp Cajun seasoning - click here for my homemade Cajun spice recipe
  • 1 tbsp breadcrumbs (I use Italian style)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
Directions:

Preheat oven to 350 degrees.

Flatten the chicken to 1/4-inch thickness.

In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper.

Combine the Cajun seasoning and breadcrumbs together in a small bowl.

Spoon about 1/4 c of the spinach mixture onto each chicken breast. Roll each chicken breast tightly and fasten with toothpicks.

Brush each chicken breast with the vegetable oil. Sprinkle the Cajun seasoning mixture evenly over all. Sprinkle any remaining spinach and cheese on top of chicken (optional).

Place the chicken seam-side down onto a tin foil-lined baking sheet (for easy cleanup). Bake for 35 to 40 minutes, or until chicken is cooked through.

Remove the toothpicks before serving!

Enjoy!

{Pinned there, Done That} Homemade Hot Pretzles

A little while back, hubby was off at drill, so I decided it would be the perfect night for some hot pretzle making! I found an Aunt Annie's Copycat recipe at Budget Savvy Diva.

We had a BLAST...

Some of us more than others; here we have Charlotte making flour angels...


But after only a few minor mishaps (like making the WRONG amount of yeast and having to go back and add another packet) we had some good looking hot pretzles.


Not as yummy-greasy as Aunt Annie's (you know what I'm talking about), but super fun all the same!


In case the original post goes missing, here are the instructions from Budget Savvy Diva
What You Need
  • 3 3/4 cups all-purpose flour
  • 1 1/2 teaspoons table salt
  • Kosher Salt for Topping
  • 1 teaspoons vegetable oil
  • 1 teaspoon butter (melted)
  • 3/4 cup plus 1 tablespoons powdered sugar
  • 1 tablespoon plus 1/2 teaspoon active dry yeast
  • 1 1/4 cups + 2 tablespoons warm water

What To Do
- Prepare yeast as instructed on the packet
- Add oil to the yeast and stir.
- In a separate bowl mix place powdered sugar, butter, flour and salt. Mix. Place yeast mixture into the dry ingredient bowl.
Flour a surface and knead the dough for about 10 minutes.
Place dough in a covered bowl ( I use plastic wrap) and let it rest for about an hour at 80 degrees. Dough should double in size.
Preheat oven at 425
Take dough and cut into 8 sections. And roll into a long rope.:

{Product Review} Quaker Soft Baked Oatmeal Cookies

Quaker Soft Baked Oatmeal Cookies

These cookies came in my MomVox 2012 influenster box that came the other day! My kids were super excited to test these out. I split it into 4 pieces so we could all sample the cookie and get an honest opinion (because, hey isn't that why there are testers?).

The kids LOVED it! Of course they did... these are cookies and they are kids! They were HUGE, chewy, cookies; what is not for a kid to like?


Hubby and I weren't so sure. I think hubby is more used to my homemade cookies that I bake and store in the freezer for when the "cookie craving" hits (when my husband doesn't eat them all) and I don't really purchase cookies in the store. So I don't really think they are for us.

Although, I must say that these would be handy for a quick and healthy snack to throw in the purse for the on-the-go family, but they definitely do not replace homemade cookies.

MooreBabies Gender Reveal Party!

One of these days I am going to catch up on, well... everything! It's been a busy few weeks, but that's besides the point.

YESTERDAY we had our gender reveal party for #3! For #1, I didn't want to find out, but hubby insisted. For #2, hubby was deployed and finding out just made it easier on me. SO for the third, it was MY CHOICE, and I wanted to have a Gender Reveal Party. I had first heard about these parties right after #2 was born and I knew I wanted to have one for our next child!

I had known about the cake, where you cut the cake and the cake itself is either pink or blue.  But THEN I came across a pin from pinterest (while not even looking for it) that showed a photo shoot reveal where they had helium balloons in a large cardboard box and opened the box to see what color came out. How fun right?! So I figured those were my two options.

For having wanted to do one of these for a while, I didn't do ANY research until this past Thursday (slacker!) because (a) before vacation I was busy planning a couples bridal shower and (b) we were waiting to see if the ultrasound tech could find out the gender before planning (#2 was uncooperative during the ultrasound).

So once we got the OK from the tech, I sent out a last minute evite to a small low-key Saturday BBQ Lunch/ Pool/ Gender Reveal Party and ended up with 13 adults and 14 kids (phew! Not as small as I thought, but still fun!)

For some reason I ALWAYS have to write a poem when it comes to parties (luau, Christmas, etc) so here was the poem I wrote:

The doctors saw,
and we will soon, too,
if pinks in our future
or maybe its blue.

Join us this weekend
for a BBQ lunch
there'll be beer and wine
(for the kids, fruit punch)

So now is your time
to make your pick,
another girl for the Moore's,
or a junior Eric.

Wear your guess,
either pink or blue,
and bring a snack for
all to share too.

Then of course was the 4th of July, so that took precedence and I took a break from party planning. But I picked up again late Thursday and Friday.

The Dessert Table

Menu
Aside from the desserts, I made hamburgers (prepped in advance with green peppers and onions mixed in) and hot dogs; all the guests brought a side, snack, or dessert!

Easy!

Weekly Meal Plan #35

Look who is back from a her 10 day vacation! Yup... me!!!  It was a super fun (and crazy) 10 days including a couples bridal shower, lake boat trips, water filled ball pit, 107* weather (sheesh, it was hot!), HUGE water slides, family fun... oh, and 1 broken collar bone for my 3 year old {tear}.

We all know what awaits us when we get home from vacation, a mess...


Ok ok, that's my garage filled with hubby's army drill stuff (that has yet to be put away), halfway packed moving boxes (for when we EVER get the house we have an offer on), laundry (since our "laundry room" is in the garage all of my laundry mess will be there actually), of course the kids outdoor toys, and JUNK!

I just feel that my house is in the same condition. It didn't help that hubby was home alone for a week of this 10 day vacation so I have his stuff to clean and put away. Woo hoo!

I will return to some regularly scheduled posting when I dig out from this mess!
