It is called "Hamburger, Rice, & Velveta" for lack of any creativity on my mom's part (no offense mom!). It's quick, it's super kid friendly, it's healthy (there are vegetables in there... but we just didn't add it to the name), and it's yummy!
Hamburger, Rice, & Velveta
All vegetable measurements are an estimation and adding more or less will not affect the cooking; but do not add too much cheese.
INGREDIENTS
1lb ground beef
2 oz Velveeta Cheese; cubed
1/2 C shredded cheddar (or so)
1 medium onion, chopped
3/4-1C Shredded carrots (I sometimes use sliced, but they need to cook a touch longer)
2-3 stalks celery, chopped
1/2 of a Green pepper, chopped
pint container cherry/grape/whatever tomatoes, quartered or sliced
1 package boil in bag rice
DIRECTIONS
Brown and drain ground beef until slightly pink and reduce heat to medium.
Meanwhile, prepare 1 package of sucess rice
To beef, add onion, carrot, celery, and green pepper and cook around 5 minutes, until onions are translucent and vegetables are al dente
Add tomatoes and *velveta and cook 3 minutes.
** DO NOT ADD TOO MUCH VELVETA ** Start out with a small amount just to "coat" the beef mixture. Too much velveta will ruin it. Taste the mixture before you add more velveta even if you think it doesn't look like there is velveta in the dish. The cheddar is used for the cheese taste.
Add the cheddar (for taste) and bag of rice and mix until cheddar cheese is incorporated.
Remove from heat and serve.
